No, the KYB GR-2 is not adjustable, it is a pre-pressurized gas type damper. These are ideal for rougher surfaces like you encounter on most daily driving and are relatively inexpensive. The KYB GR-2 front strut insert (gas) for the 280ZX struts is P/N 365013. The rear shock in the same make is P/N 343149. These are readily available from anyone selling KYB.

Yes you can use the Z31 rear bearing carriers/spindle. I would recommend the 280ZX rear calipers though since the parking brake cable brackets are on a more favourable angle.
